Ingredients:

  • 2 cups all-purpose flour (250 grams or bread flour**)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon and a pinch of nutmeg
  • 1 large egg
  • 1 cup plus 2 tablespoons sugar (220 grams)
  • 1/2 cup vegetable oil (114 grams)
  • 2 tablespoons milk or buttermilk (I used buttermilk)
  • 1/2 teaspoon vanilla extract
  • 3 large very ripe bananas (mashed (1 1/4 cup mashed/10 oz weight peeled))
  • 1 cup chopped walnuts (or use a mixture of walnuts and pecans)

How to cook:

  1. Turn the oven temperature up to 325 degrees. Prepare a loaf pan (8x4) by greasing the bottom and 1/2 inch up the sides and lining it with parchment paper. Prepare an additional 1 cup capacity custard cup by greasing it. You may also just use a standard loaf pan with a capacity of 6 cups, measuring 8 1/2 by 4.5 inches.
  2. Mix the dry ingredients (flour, baking soda, baking powder, salt, and spices) for one minute.
  3. Whisk the egg, sugar, and oil in a mixing bowl until combined. Add the vanilla and milk and whisk again until creamy.
  4. Make sure you have 10 ounces, or 1 1/4 cups, of banana puree by mashing it with a fork, potato masher, or whisk. Add it to the batter and mix it in thoroughly.
  5. Stir after each addition of the flour mixture in three separate additions.
  6. Mix in a quarter cup of chopped walnuts. Make sure the batter is reasonably thick.
  7. Spread batter in the prepared loaf pan, being sure to leave some room for it to rise up the edges. Ideally, you'd like to keep it an inch or so from the very top. Proceed to fill a custard cup with the leftover batter.
  8. Slice through it with a knife to pop the air bubbles. Put the rest of the nuts on top. Fill the remaining custard cup with the remaining batter.
  9. About 65 minutes, or until a toothpick inserted in the center comes out clean. Use a larger loaf pan and check it at 45 minutes. 40 minutes should be sufficient for the custard cup variation.
  10. Use a knife to loosen the edges, but leave the dish in the pan. Chill for 20 minutes in the pan, then transfer to a cooling rack and cool for several hours. In an ideal world, you would wait until it cooled down before freezing it. Even after being frozen and thawed, the bread's texture improves.
